(Cheap) Korean beef tartare sold by other restaurants are made from beef cattle (dairy cows). The differences between Korean Beef and Beef Cattle in terms of price and taste are like night and day. Odarijip never uses beef cattle, and only uses soft Round of Eye from selected Korean beef.
